Pudina tal-hobz (Maltese bread pudding)

Hi Everyone,

Here is the recipe to the famous Maltese Bread pudding.  I made it for the first time at Christmas time and it was a huge success.  Everyone enjoyed it and it was just like the mumma makes!

Ingredients

Serves: 20

1 loaf day old bread (Vienna bread is best)

375g sugar

2 tablespoons custard powder

2 tablespoons peanut butter

4 tablespoons cocoa

1/2 cup of grated coconut

500g sultanas

250g almonds

250g glace cherries, halved

1 teaspoon vanilla essence

4 tablespoons whisky 

 

Directions

Preparation:2hours › Cook:45min › Ready in:2hours45min

Tear bread into small pieces, put in the bowl, cover with water and soak for 1½ hours.

Preheat oven to 180 degrees C (fan forced)

Place bread in a colander and mash between your hands, draining all the liquid.

Transfer to a large bowl and add sugar, custard powder, coconut and cocoa.

Add sultanas, half of the almonds, half of the glace cherries and peanut butter. Add vanilla essence and whisky, mix well (best to use your fingers) mix until all combined an bread has no white spots (should all be a cocoa colour).

Pour into a baking dish and decorate with remaining almonds and cherries.

Bake for 45 minutes.

Check puddina by piercing with a toothpick, it should be dry when you take it out.
