Day 10 of Paleo for Athletes

I have now completed Day 10 of Paleo for Athletes.  I am feeling great and I have noticed my body's composition changing, my skin is much clearer and just feeling great overall!

I have been craving a bit of chocolate and yogurt at times but I have been able to compress the cravings with fruit salads and dried fruits.

While on this eating plan, I have been pleasantly surprised with how well spices create a breading like crust on chicken and fish with out using breadcrumbs or any other processed crumb mixture.

My meals for day 10 were:

Breakfast: Scrambled eggs with smoked salmon & 3 slices of rock melon

Snack: 3 dried figs and 10 almonds

Lunch: Large garden salad with Tuna mixed through

Snack: Apple, Whey protein shake on water

Dinner: Breaded Chicken thighs (recipe below) with Roasted sweet potato and steamed broccoli and carrots

Snack: Fruit salad with grapes, watermelon and glass of Almond milk 

I used the following ingredients for "Breaded Chicken Thighs (serves2):

400g Chicken Thighs (bone removed)

2 tsp garlic powder

2 tsp mustard powder

2 tsp onion powder

1/2 tsp salt & 1/2 tsp pepper

1 tsp paprika powder

Place all ingredients in a kitchen bag and shake around  and message chicken thighs making sure spices are coated and rubbed into the chicken.  In a frying pan over medium to high heat fry chicken thighs until golden brown on each side, and chicken is cooked through.

Serve with roasted Sweet potato and steamed veggies of your choice.

Comments:  The chicken was delicious the spices gave it a great breaded coating and to be honest I prefer the spices coating to the breadcrumbs as it was very tasty.
